I LOVE artichokes!
These gems are native to the Mediterranean (I knew I'd like it there) and are super good for you. A large artichoke is only between 25-60 calories, has 4 grams of protein and 0 fat. They are great sources of potassium, vitamin C, folate, and magnesium. They are super high in antioxidants and chocked full of fiber. In fact, 1 artichoke is 1/4 of the USDA's recommended daily amount of fiber---thats more than in a whole cup of prunes!
When shopping for artichokes, look for the heaviest and firmest of the bunch. They should have a fresh green color and compact center leaves.
As for cooking, they are great grilled, stuffed or steamed. They are wonderful alone or added to other dishes. My favorite way to eat them is steamed in my instant pot (add 1 cup of water and cook on manual for 10 minutes, manual release--if not perfect yet, close lid and add 2 more minutes) As for serving, I know this makes them less healthy, but...I HAVE to dip them in vegan aioli, recipe below.
Vegan Aioli
1/2 cup vegan mayo (Hampton Creek's Just Mayo is my fav)
2 cloves garlic, finely minced
1T lemon juice
2t dijon
salt & pepper
Mix all, adding more of whatever you like and Enjoy!
